INSTRUCTIONS FOR DIFFERENTING PURE COCOA POWDER

Pure cocoa:
- Color: Uniform, light brown in color.
- Aroma: Natural cocoa flavor, strong aroma.
- Taste: Bitter taste, slightly fatty because cocoa beans have a bit of butter, taste carefully, you will see a very light sour taste.
- When mixed with the same ratio of water: The powder will clump, difficult to dissolve, the solution is more liquid, but the drink has a rich aroma, the cocoa smell stands out.
Cocoa brewed, alkalized:
- Color: Uneven color, reddish brown to dark brown depending on the degree of alkalization.
- Fragrance: The smell is not as fragrant or has other scents such as chocolate, vanilla, milk... due to the addition of flavorings.
- Taste: There is a sweet taste (due to the addition of milk sugar) or a little cocoa smell due to a lot of filler powder. Or mildly bitter.
- When mixed with the same ratio of water: The solution is thicker for mixing more cereal flour or thickener, when drinking less cocoa smell or just full of milk/sugar flavor.
